Keto, Whole30 & Paleo Coconut Shrimp

Keto Coconut Shrimp is the perfect Keto appetizer or Keto friendly dinner. You can either pan fry or make them in the air fryer, either way, this is an easy low carb shrimp recipe the whole family, even non-keto’ers will love.


Ingredients:


  • 1 lb (16 ounces) Raw Shrimp, Peeled and Deveined
  • 1/4 Cup Bob's Red Mill Organic Coconut Flour
  • 3/4 Cup Organic Unsweetened Coconut Flakes
  • 1 Tablespoon Lakanto Monk Fruit Sweetener
  • 2 Eggs
  • Coconut Oil for pan frying


Instructions:

How to Make Keto Pan Fried Coconut Shrimp:

  1. In a small bowl mix the salt, Monk Fruit Sweetener, and coconut flour
  2. Create and an assembly line of three bowls, one with the flour mixture, the second with the eggs and the third with the unsweetened shredded Coconut
  3. Dredge the shrimp in the flour mixture, then in the egg and finally in the shredded coconut until well coated
  4. Fill a saute pan about 2 inches with coconut oil and put on medium high heat
  5. Once the oil is hot place shrimp in oil and cook 1-2 minutes on each side. Shrimp cook quickly so don't let them cook too long

How to Make Air Fryer Shrimp:

  1. In a small bowl mix the salt, Monk Fruit Sweetener, and coconut flour
  2. Create and an assembly line of three bowls, one with the flour mixture, the second with the eggs and the third with the unsweetened shredded Coconut
  3. Set air fryer to 380 F
  4. Cook for about 12 minutes or until shrimp are golden brown.


NOTES:

  • Coconut Oil For Pan frying was not included in the nutrition facts
