Vegan Lemon Pasta with Spinach #vegan #pasta

Healthy spinach, garlic and lemon combine to coat angel hair pasta for a lovely side that’ll freshen any meal.


You’ll Need:


  • 8 ounces uncooked angel hair pasta
  • 2 garlic cloves, minced
  • 2 tablespoons butter
  • 1 package (6 ounces) fresh baby spinach
  • 3 tablespoons lemon juice
  • 2 teaspoons grated lemon zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper


Instructions:


  1. Cook pasta according to package directions.
  2. Meanwhile, in a large skillet, saute garlic in butter until tender. Add the spinach, lemon juice and zest, salt and pepper; cook 2-3 minutes longer or until spinach is wilted.
  3. Drain pasta. Add to skillet; toss to coat.

What is Blackened Chicken?

Blackened Chicken is all about the rub. This recipe features a homemade blackened seasoning packed with paprika, onion powder, garlic powder, cayenne pepper and other spices. This is a spice mix that originated in New Orleans and can be used on any type of protein and is also great on vegetables. After you make the Blackened Seasoning simply rub onto the meat until it is completely coated. You can either grill or pan sear your meat until it is cooked though and finish by brushing with garlic butter. If you want to add this spice mix as a pantry staple you can store the mix in an air tight container and use it anytime. The recipe below will liberally cover 1 pound of meat or vegetables, or more if you want to go lighter on the seasoning.


You’ll Need:


  • 1 pound of chicken breast
  • Blackening Seasoning:
  • 1 tablespoon paprika
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon garlic salt
  • 1/4 teaspoon pepper
  • Garlic Butter
  • 1 tablespoon butter, melted
  • 1 teaspoon minced garlic


Instructions:


  1. Heat a grill to high heat (approximtely 400 degrees)
  2. In a small bowl combine all the spice ingredients and mix well.
  3. Slice the chicken so they are uniform in thickness so they cook at the same rate. (See video)
  4. Sprinkle 1/2 of the seasoning mix on each side of the chicken, make sure to completely cover.
  5. Grill for 4-5 minutes on each side or until the internal temperature reaches 165 degrees.
  6. Note, the cooking time will vary greatly on the thickness of the chicken.
  7. When chicken has reached the proper internal temp brush with garlic butter and serve.

  • 1/2 teaspoon baking powder


Instructions:


  1. Preheat oven to 350 degrees
  2. In a medium size mixing bowl combine all of the ingredients.
  3. Allow the mixture to sit for 10 minutes for the coconut flour to absorb some of the moisture.
  4. Spray a regular mini muffin pan or use a silicone muffin pan (my recommendation) and fill each cup about 3/4 full.
  5. Bake 15-18 minutes until golden brown and cooked through.
  6. Makes 24 mini muffins

  • 3/4 cup cheddar cheese
  • 3/4 cup mozzarella cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper


Instructions:


  1. Preheat oven to 350 degrees.
  2. Brown ground beef in a cast-iron skillet then drain the excess grease.
  3. Add cream cheese and stir until melted then add beef broth, heavy whipping cream, garlic powder, and salt/pepper.
  4. Bring to a boil and cook on medium heat until mixture begins to thicken then reduce heat and simmer.
  5. Once the ground beef mixture thickens add the two cans of green beans that have been drained on top then sprinkle cheese on top of green beans.
  6. Bake for 25 minutes.

Theese Tiramisu Cheesecake are smelled delicious when I took it out of the oven and placed it onto our tiny kitchen balcony to cool. I was really quite pleased with it and couldn’t wait to try it the next day, after it had properly chilled.


You’ll Need:


  • 22 Biscoff cookies
  • 15g (or 1 tablespoon) melted butter
  • 2½ tablespoons of Kahlua
  • ¾ tablespoon Baileys
  • 4 teaspoons of instant coffee powder
  • 700g (or 1½ pounds) cream cheese, at room temperature
  • 125g (or ¾ cup + 2 teaspoons) granulated sugar
  • 3 whole eggs
  • 1 egg yolk
  • 100ml (or ⅓ cup + 4 teaspoons) whipping cream
  • cocoa for dusting (optional)
  • powdered sugar for dusting (optional)


Instructions:


  1. Start with the cheesecake crust. Preheat your oven to 175°C/350°F and line the bottom of a 18-cm (7-inch) springform pan with baking parchment. Make sure that you have a roasting pan that's big enough for the springform pan to sit in.
  2. In a food processor, blitz the Biscoff cookies to a fine powder. Add the melted butter and blitz briefly to combine. Tip the cookie mixture into the prepared springform pan and, using the back of a spoon, press the crumbs into an even layer into the bottom of the springform pan. Bake for about 8 minutes, or until slightly golden and the kitchen smells of freshly baked Biscoff cookies.
  3. In the meantime, make some coffee extract. Combine the Kahlua, Baileys and instant coffee powder in a small saucepan. Heat over low heat, stirring until the coffee granules have dissolved. Don't allow the mixture to become too hot, or you will cook off the alcohol. Set aside to cool.
  4. In a medium-sized bowl, mix together the cheese and sugar. Beat in the eggs an egg yolk, one at a time. Next, mix in the whipping cream, followed by the coffee extract. The batter should look smooth and shiny.
  5. This cheesecake is baked in a water bath, so the bottom and sides of the springform pan need to be wrapped with aluminum foil to ensure that the water will not come in contact with the cake. First, bring 2 liters (a little more than 2 quarts) of water to a boil in a kettle. Get a piece of aluminum foil and place the sprinform pan in the middle of the foil. Wrap the sides of the foil around the pan. Repeat with another piece of aluminum foil. Finally, crimp the tops of the foil sheets around the top edge of the pan.
  6. Place the springform pan in a large, high-sided roasting pan. Place a sieve over the springform pan and gently pour in the cream cheese batter. Passing the batter through a sieve ensures that no lumps of cheese end up in the cake. Press the batter through the sieve with a rubber spatula. Place the roasting pan (with the sprinform pan in it) in the oven. Carefully pour the boiling water into the roasting pan, about halfway up to the sides of the springform pan. Bake for about 60 minutes, then place a piece of aluminum foil on top of the cake if it's browning too fast and bake for another 25 minutes, or until the edges of the cake are set but the center of the cake is still a little wobbly.
  7. Carefully take the roasting pan out of the oven. Take the springform pan out of the water bath, discard the hot water and leave the cheesecake to cool to room temperature. Once the cheesecake has cooled, cover with plastic wrap and place in the fridge for at least 4 hours or overnight.
  8. Allow the cheesecake to come to room temperature before serving. This takes about 3 hours. Remove the cake from the springform pan by running a knife betwen the edge of the cake and the pan. Open the springform collar and gently remove it. If you want to do a star design on your cheesecake, first dust the top with powdered sugar, place cut out paper stars on top of it and dust with cocoa. If you don't care about a star design, just dust with cocoa, but even that it optional.

  • 1 pound Italian sausage, cooked and drained
  • 4 ounces cream cheese, softened
  • 1/3 cup coconut flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon minced garlic
  • 1 teaspoon Italian seasoning
  • 3 eggs, beaten
  • 1 1/4 cup shredded mozzarella

Instructions:


  1. Preheat oven to 350 degrees
  2. Combine cooked sausage and cream cheese until completely combined.
  3. Add in remaining ingredients until well combined and chill 10 minutes.
  4. **If you skip chilling the dough they will flatten as they cook and not be nice round balls**
  5. Drop onto a greased baking sheet (I like to use the silicone baking mats) using a small cookie scoop.
  6. Bake 18-20 minutes until golden brown.
  7. This made 30 for me, but that will depend on the size scoop you use and how tightly you pack them.

This Baked Cheese Sticks Recipe is a healthier take on fried Cheese Sticks. They’re filled with Ham & Cheese for a whole new flavor!


Ingredients:


  • 12 eggroll wrappers 7 inch
  • 12 slices honey ham thinly sliced
  • 12 Mozzarella Sticks (string cheese)
  • Olive Oil
  • garlic salt


Instructions:


  1. Preheat oven to 350F.
  2. Line a baking sheet with parchment paper.
  3. Lay an eggroll wrap down in a diamond shape and place a slice of ham in the middle. Place one mozzarella stick in the middle of the ham. Fold in the sides of the wrapper into the cheese and then roll up the entire wrapper to create eggroll shape. Place on baking sheet seam side down.
  4. Brush each stick lightly with olive oil and sprinkle with garlic salt to taste.
  5. Bake for 12-15 minutes or until browned to your liking (you might want to check them with a couple minutes left as all ovens are different). Remove from the oven and turn the sticks. Place back in the oven for 4-5 more minutes or until browned.
  6. Serve with dipping sauce of your choice.
  7. Enjoy!
